Black Bean Tacos

Ingredients:
o 2 Whole Wheat Tortillas
o ½ cup black beans, no salt added or low sodium
o 6 whole cherry tomatoes, quartered
o 1 cup salad mix
o 1/4 cup corn
o 1 avocado
o ¼ cup Mexican blend cheese, reduced fat

Instructions:
1. Cook black beans until tender
2. Chop vegetables such as tomatoes and salad
3. Add black beans, corn, cheese, avocado, and vegetables to Whole Wheat tortilla
